Swaledale Heather Blend Honey is a type of honey produced by hives located on the edge of the Swaledale moors that foraged on heather and other blossoms during the late summer and early autumn.  This honey has a strong, robust taste and is beautiful dark amber color.
 
Rather than using traditional granulated sugar, honey is used to sweeten and enhance the raspberry flavour.  The honey lends a distinct taste, with its floral and earthy notes, adding complexity to the jam's flavour profile.  Its smooth and velvety texture blends seamlessly with the raspberries, creating a harmonious combination of sweet and tangy elements.
